RED CLOVER LEMONADE

Red clover is in bloom from mid May to early June.

The flowers and leaves of red clover are reported to have many health benefits and the plant is rich in calcium and other minerals. So not only is this drink delicious it’s good for you too!

Plus the colour changing process at the end of this recipe makes it well worth making.

100g red clover blossoms

1ltr water

100g to 200g caster sugar

juice of 4 lemons

  1. Gather 100g of red clover blossoms. Give them a good shake to remove any bugs or dirt.

  2. Remove the heads from the stems and place the blossoms in a pan along with the water and bring to a boil. Reduce the heat and let simmer for around 5 minutes.

  3. Strain the liquid through a fine mesh siev or muslin and then add back to the pan. Add sugar to taste and heat gently until all the sugar dissolves. Leave the liquid to cool completely.

  4. When cool add the lemon juice and watch the liquid transform from yellow to pink. Store in the fridge and consume within a few days.
