350ml vodka or gin

6 heads of lilac

250g caster sugar

125ml water

colouring (optional)

  1. Rinse the lilac heads to remove any bugs or dirt.

  2. Place alcohol into a large jar followed by 2 heads of lilac. Close the lid and then leave for 6 to 8 hours. Strain the alcohol and then repeat this process two more times, replacing with fresh flowers each time.

  3. When the alcohol has been strained for a third time place the caster sugar and water into a pan, stir and then heat until all the sugar is dissolved.

  4. Strain the alcohol through a Muslin of coffee filter into a bottle, followed by the sugar syrup. (You can also add a little colouring at this point if you wish) Seal and then leave for a month before drinking.
